PWI Construction completed the full restaurant renovation of new Knife & Spoon at The Ritz-Carlton Grande Lakes Orlando, creating a luxurious dining destination for modern steak and seafood cuisine. This project included a complete transformation, gutting and reconstructing the former restaurant space to add an expanded lounge, upgraded kitchen, and redesigned dining areas. Working in collaboration with Schoos Design, the design draws inspiration from Florida’s rich landscape and cultural heritage.

The 235-seat restaurant features bright colors, light woods, lush greenery, and soft textures—creating a warm, sophisticated atmosphere that balances luxury with comfort. Highlights include an expanded lounge, a completely reconstructed kitchen, and a stunning dining room centered around a floating “cloud ceiling” and sculpted moss garden. A brass-clad bar with natural turquoise stone anchors the space, adding a welcoming glow and artistic touch.

Opened during the pandemic, Knife & Spoon quickly became a top luxury restaurant in Orlando, earning MICHELIN stars in 2022 and 2023. This renovation highlights PWI Construction’s expertise in hospitality construction, restaurant renovations, and tenant improvements, providing high-end dining experiences that combine functionality, design excellence, and operational efficiency.
